
Mai-Twice
The classic reimagined.
Ingredients:
2 oz SOIRÉ Blanco
0.75 oz fresh lime juice
0.5 oz orange curaçao
0.5 oz orgeat (almond syrup)
0.25 oz passionfruit purée (or syrup)
Garnish: Mint sprig, dehydrated lime wheel, pineapple frond
Preparation:
Add SOIRÉ Blanco, lime juice, curaçao, orgeat + passionfruit purée to a shaker with ice.
Shake lightly, just until chilled.
Strain into a double old-fashioned glass filled with crushed ice.
Garnish with a slapped mint sprig, a dehydrated lime wheel, and a pineapple frond for visual lift.

This riff honors the 1944 Trader Vic’s original but introduces passionfruit for a fresh, modern edge. Passionfruit adds brightness and depth without overwhelming the almond-lime balance. It’s a subtle twist that bartenders respect and guests remember.
